Pudina Lachha Paratha ( Mint Layered Indian Flatbread )



    lachha Parathas are very famous in northern parts of India ,different than its counterpart porotta which is famous in south India which are made of maida/All purpose flour. These are flaky layered parathas made from whole wheat flour using a technique so as to get the layers. The  mint used in the paratha gives it a very unique flavor .





Ingredients

2 Cups Whole wheat flour
2 Green chilies Finely chopped
1/2 Cup Mint leaves Finely chopped
1Tsp Ajwain/Carom seeds
1/2Tsp Cumin powder
Salt To taste
5-6Tbs cooking Oil
Warm water for kneading

Directions

  • In a bowl mix green chilies, mint, ajwain, cumin powder, salt and 1Tbs oil to the flour. Add warm water gradually and knead it to a soft dough. Keep aside and allow it to rest for 20-25 minutes.

  • Divide the dough in equal balls. Flatten  each ball.

  • Roll out each flattened ball into a 6" diameter circle. Cut into strips lengthways.

 
  • Apply ghee/oil to each strips and then sprinkle some wheat flour over the strips. Now place all the strips over the center one.
 
  • Roll like a Swiss roll. Press a little with your fingers.

  • Take a roll  and make 6" diameter roti by rolling it gently.
  • Heat a griddle or tava and cook the roti on both sides using ghee or oil. 

  • Place  the cooked paratha  between your palms and lightly press towards the center to show the layers clearly.
  • Serve hot with curry of your choice.
  • Enjoy!!!!
Notes
  •  You can replace whole wheat flour with half Maida/All purpose flour and half whole wheat flour.
  • To get more minty  flavor ,grind mint leaves with chilies and mix the ground paste to the flour and knead .
