Paneer Methi Malai


 Paneer cooked in a creamy sauce and flavoured with dry fenugreek leaves give this Curry a very distinct flavour .It is  very easy to make and can be prepared quickly if you have all the ingredients available with you. Instead of using fresh fenugreek leaves ,kasuri methi is used which gives a nice and aromatic flavour to the dish. it goes very well with any kind of Indian flat breads i.e Naan,kulcha,poori or even plain phulkas.I served mine with ajwain parathas.

Bhurji Paav- Indian version Scrambled egg (Mumbai street food) With Fenugreek leaves and pav

"Bhurji Pav" ,The staple street food of the most happening city in India  yesss!!!! "Mumbai". You will see many street hawkers selling those in their stalls even after midnight hours .You will see these stalls on every corner of the street . A very good option if you are hungry at midnight and want to binge on something. Bhurji paav is nothing but egg bhurji served with toasted pav.

       Now what is egg bhurji ...Egg bhurji or Anda Bhurji, is a dish popular in north and western India and even in Pakistan where its called egg khagina made with eggs. Its an Indian style scrambled egg with addition of  chopped onions, chilies, and Indian spices Usually  served with rotis or parathas,but in Mumbai street side its served with pav.
  I have tweaked the recipe a little by adding fresh fenugreek leaves to the preparation thus giving it a unique flavor and with all goodness of fenugreek. Fenugreek and egg compliment each other very well. My mom make this often and thanks to her ,its now a regular preparation at my place too.

    As in my earlier post ,I had pointed out the health benefits of methi/fenugreek.It make sense to use it  in our food as often as we can. Being from a family with high sugar and diabetics ,everyone gets concerned of me going on the same path in the future and suggest me to take all possible precautions to avoid the situation in near future. Methi helps in regulating the blood sugars. So I try to use methi in day to day cooking as much as possible.
    Coming to methi paratha,its  a good way to use methi leaves in parathas specially for kids ,Its very easy to make and are good for breakfast with all the goodness and nutrition. Unlike other parathas which are usually stuffed with the filling/stuffing's, in these parathas fenugreek leaves are directly mixed to flour with seasonings and cooked. Its usually served with plain yogurt and pickle.
