Coconut Pulao

  Coconut Pulao



A very mild and delicately flavored rice preparation which  goes very well with  seafood curries.
the subtle taste of coconut and the whole garam masala used give it a nice aroma. 
   I usually make ghee rice ,Jeera rice or Peas pulao  along with my non vegetarian dishes, but thought of  trying coconut pula instead this time and it came out very good.

Ingredients
  • Rice  2Cups
  • Coconut milk 3Cups
  • Water 1 Cup
  • Fresh grated coconut 4Tbs
  • Green chilies 2-3 slit vertically
  • Green cardamom 2-3
  • Black cardamom  2
  • Bay leaf 2
  • Pepper corns 4-5
  • Cinnamon 1 Stick
  • Cloves 2-3
  • Ghee/Clarified butter  2Tbs
  • Salt to taste

Directions

  •  Wash and soak rice or 30 minute keep aside.
  • Heat ghee in  a heavy bottomed  pan ,add all the whole gram masala .
  • Add the slit green chilies and sauté for 30 seconds.
  • Add Coconut milk, water, grated coconut, salt and rice and stir it gently. Bring to a boil.
  • Cover and cook until rice is cooked and becomes tender.
  • Serve hot with your choice of curry.
  • Enjoy!!!
