The name itself  will attract you to see the post right?...Sounds something different, That's what happened with me when I got bored with the usual bread omelet stuff and was looking for some new breakfast recipes done with eggs and I bumped upon a you tube video with a heading saying " Disco fried eggs"  and it got me curious to watch and after watching it looked so tempting that  I decided to have it made in my kitchen the very next morning. Asked hubby dear to bring some fresh pav while heading back to home from office .
       Disco fried eggs has nothing to do with dancing eggs(LOL) ,Its basically an omelet made using spice powders and pav directly placed above the eggs and cooked. A nice alternative t the old omelet and toast. An Indian style masala omelet . A great  quick fix for breakfast ,lunch or even dinner if you are in jiffy and too lazy to cook.

    Baida roti is one of Mumbai’s famous and delicious street food. Baida roti is roti made with all purpose flour/Maida ,filled with Mince meat or Kheema and Egg. Talking of "Baida Roti" without mentioning the legendary road-side restaurant "Bademiya " is really not appropriate at least among the foodies. A visit to Mumbai  isn't complete without trying the succulent kebabs and grilled chicken and not to forget the baida roti from Bademiya. It's one of the best street food you'll have ever tasted.
I am telling this with my own experience. Being an Ex-Mumbaikar ,my husband was and still is a big fan of Bademiya and always use to keep nagging me of not ever tasting the food from the same. But this summer I got lucky and I did make sure to visit "THE" restaurant while on vacation to Mumbai, and sure will suggest to visit the place if anyone gets a chance, Just awesome.
        I have used chicken mince for the preparation but can use any meat mince.

"Bhurji Pav" ,The staple street food of the most happening city in India  yesss!!!! "Mumbai". You will see many street hawkers selling those in their stalls even after midnight hours .You will see these stalls on every corner of the street . A very good option if you are hungry at midnight and want to binge on something. Bhurji paav is nothing but egg bhurji served with toasted pav.

       Now what is egg bhurji ...Egg bhurji or Anda Bhurji, is a dish popular in north and western India and even in Pakistan where its called egg khagina made with eggs. Its an Indian style scrambled egg with addition of  chopped onions, chilies, and Indian spices Usually  served with rotis or parathas,but in Mumbai street side its served with pav.
  I have tweaked the recipe a little by adding fresh fenugreek leaves to the preparation thus giving it a unique flavor and with all goodness of fenugreek. Fenugreek and egg compliment each other very well. My mom make this often and thanks to her ,its now a regular preparation at my place too.

Egg Mayonnaise Sandwich

Egg Mayo Sandwich

  Aao batau tumhe ande ka funda.....Yesss Eggs...I m just crazy  about eggs ...would like to say "Tariff karu kya uski jisne tumhe banaya"....For me the proverb "Sunday ho ya monday roz khao ande" goes very well.I can have it in breakfast.lunch and dinner.Boiled ,scrambled,in desserts anything .I just start freaking when I see my egg slot in the refrigerator  goes empty .Luckily my husband too is a huge egg fan.
   Today the recipe is of a sandwich filled with egg and mayonnaise.Its a classic British sandwich often served with afternoon tea.The dish is very simple and needs very less ingredients.You can make it as simple as just mixing egg and mayo with salt & pepper or enhance the flavour by adding herbs ,cheese,mustard ....according to your palette .A sandwich which not only elders devour but kids too love it.


















Difficulty level : Very Easy
Preparation Time : 5 minutes
Cooking time   : 10 minutes


Ingredients


  • Eggs 2 boiled and finely chopped
  • Mayonnaise  2 Tbs
  • Salt  To taste
  • Crushed pepper 1/4 Tsp
  • Cayenne pepper/Chili powder 1/4 Tsp
  • Onion small/Green onion  finely chopped
  • Dijon mustard  1/2 Tsp (optional)
  • Cilantro/Coriander  1 Tbs (optional)
  • Shredded cheese   1/4 Cup(optional)
  • Bread  4 slices

Directions

  • Boil eggs for 7-8 minutes until hard boiled.Let it cool.
  • Finely chop the eggs.
  • In a bowl mix all the ingredients .
  • Cut the sides of the bread slices. spread the above mixture over one slice of bread and place another slice over it.If you  want to serve as is...cut it into triangle,circle or whatever shape you like.
  • I like my sandwiches toasted .If you fall in that category spread butter on one side of the slice filling the mixture on other side .Cover it with another slice and  put it in a griddle butter side down. Keep it for few seconds and flip it over and take it out when its done.


Notes
       
  • After boiling eggs place it under running cold water for some time.This ensures that the eggs are not overcooked with rubber like texture.
  • Can avoid adding onions if you dont like the raw taste of the onion.Green onions can be used instead.
  • Can add herbs of your choice like parsley,dill .
