The name itself  will attract you to see the post right?...Sounds something different, That's what happened with me when I got bored with the usual bread omelet stuff and was looking for some new breakfast recipes done with eggs and I bumped upon a you tube video with a heading saying " Disco fried eggs"  and it got me curious to watch and after watching it looked so tempting that  I decided to have it made in my kitchen the very next morning. Asked hubby dear to bring some fresh pav while heading back to home from office .
       Disco fried eggs has nothing to do with dancing eggs(LOL) ,Its basically an omelet made using spice powders and pav directly placed above the eggs and cooked. A nice alternative t the old omelet and toast. An Indian style masala omelet . A great  quick fix for breakfast ,lunch or even dinner if you are in jiffy and too lazy to cook.

"Bhurji Pav" ,The staple street food of the most happening city in India  yesss!!!! "Mumbai". You will see many street hawkers selling those in their stalls even after midnight hours .You will see these stalls on every corner of the street . A very good option if you are hungry at midnight and want to binge on something. Bhurji paav is nothing but egg bhurji served with toasted pav.

       Now what is egg bhurji ...Egg bhurji or Anda Bhurji, is a dish popular in north and western India and even in Pakistan where its called egg khagina made with eggs. Its an Indian style scrambled egg with addition of  chopped onions, chilies, and Indian spices Usually  served with rotis or parathas,but in Mumbai street side its served with pav.
  I have tweaked the recipe a little by adding fresh fenugreek leaves to the preparation thus giving it a unique flavor and with all goodness of fenugreek. Fenugreek and egg compliment each other very well. My mom make this often and thanks to her ,its now a regular preparation at my place too.
